All meats and sausages start out as the finest restaurant grade meats.
Sausages are made by us and contain much less fats than are in commercially available products.
Our slow smoked meats are the heart of our operation as well as the always popular Italian sausages we make. Italian sausage types: Available in Pork or Chicken
Regular: High quality, low fat, with standard Italian spices
Standard Hot: same as above with a bit of heat
(Really hot available)
Loaded Italian: This sausage gets Sweet onions, Red and yellow peppers that have been cooked down until they are sweet and tender. then we add a sharp Italian cheese to give it a taste all its own. (also available in hot) I have put the smoker to good use during the colder months.
We are now offering 8oz. bricks of smoked cheeses. These are cold smoked from 4 to 6 hours depending on the type of cheese.
We start with quality commercial cheeses and smoke them with our blended hardwoods making an incredible smokey flavor profile.
All cheeses are vacuum packed and aged for at least 30 days.
